Assign Categories to Portfolio Posts?

Is there a way to assign categories to portfolio posts as you can with regular posts? I would like to be able to create down menus in the main navigation that access the portfolio posts via their categories.
If that is not possible, as an alternative - can Portfolio Post "types" or "tags" be placed into the navigation menus in the same way that regular post categories can?

Yeah the portfolio post types can be placed in navigation menus just like regular blog posts. Under Appearance > Menus, click on Screen Options at the top right of the dashboard. This will give you additional options like "Types". Note: This will just end up in a basic archives layout.
Ideally you would create pages for each category and just use that if you wanted it to be formatted perfectly. But the solution above will answer your question.
